RICS is an excellent example of how the multi skill disciplines that Catering Consultancy Bureau (CCB) possess can be bought to a project where the client now receives a commercial return, the catering  was previously a subsided operation. This project demonstrates how we plan and structure our concept development approach. CCB were invited to examine the present food service arrangement at RICS, Great George Street, Londo; working with the client initially, we listened to what RICS wanted to achieve. We structured our approach via an internal collaboration of resource and proposed various concepts to the Client. We worked on a collaborative basis with food service designers, project managers and the client to establish an impressive brief that responded fully to RICS original brief of what they wanted to achieve.

This brief was translated into a full specification and a detailed concept for caterers to respond to. CCB has a unique approach to the tendering and review of a catering facility. This approach was used to gain an insight into just what vision caterers read into the brief, and how they would respond. CCB and the client met with a shortlist of food service companies and they were invited to tender for the facilities which included:

  • Club Bar and Membership lounge
  • Fine Dining Restaurant with a signature chef as a partner
  • Commercial Private dining room
  • Full conferencing facilities on both an internal and commercial arrangement
  • Staff Lounge and restaurant
  • Members room with beverage facilities

The outcome was a preferential arrangement for RICS and Restaurant Associates, who had formed a collaboration with Michelin Starred Chef,  Michel Roux, who was appointed for all the catering requirements, with Restaurant Associates managing the staff facility and commercial fine dining restaurant and the overall partnership with Michel Roux. This arrangement, along with CCB, has now started its 15 year of trading with CCB being retained as catering consultants for management and advice
